Super healthy fish parcels

I learnt this recipe from a friend, changed a bit to suit our tastes and it's one of our favourite Friday meals. You can use lemon instead of the lime, and salmon instead of the white fish to make it more festive.

To serve 4 persons:
4 fillets of cod or other white fish
2 large leeks
4 medium or big carrots
1 lime, juice and zest
freshly ground pepper
good pinch of dried chilli flakes
to serve: baked potatoes and a green salad (and mybe some mayo for the kids ;) )

First, slice the leeks thinly and grate coarsly the carrots.
Place the fillets on a large piece of tin foil each and sprinkle with lime juice, zest, pepper and chilli flakes. If you prefer a saltier taste add some salt too.

Divide the leek slice between the parcels, heaping them over the fish.

 Then divide the carrot.
Seal the parcels loosely, so the fish and veg will have enough space to steam in their own juices. Place in a pre-heated oven and bake for about 20-30 mins, depending on the size of fish and the amount of veg.

Serve it with a green salad made up from lettuce and grated carrots sprinkled with lemon juice.
