Easy peasy crepes

Another of my daughters' favourite!

Ingredients for appr. 12 crepes:
200 g flour
2 eggs
500 ml milk
pinch salt
50 ml oil

 Beat all the ingredients together until smooth. Leave to stand covered for 30 mins or an hour.
 Brush a frying pan with a little oil, heat it and when it's very hot pour a laddle-ful of the batter in.
 Quickly turn the pan until all is covered with a thin layer of batter. Cook until sets.
 Loosen at the edges with a wooden spatula and toss it! Or you can flip it with the spatula ;)
 Slide onto a plate and spread with your favourite filling. We LOVE Nutella!
But you can use cinnamon+sugar, cocoa powder, jam or even savoury fillings (as there is no sugar in the batter).
 And enjoy! But be quick, they disappear very fast...
They are easy as you have oil already in your batter, after the initial drops of oil into the pan you don't have to grease it again!
I got this recipe from my Mum. She had her birthday recently and one of my friends made a gorgeous birthday card for her (and one for my Dad too).
