Easy pizza from scratch

This is a great recipe when you have the time to make it ;) The dough can be made in advance the day before and stored in the fridge. But don't forget to stand it on room temperature an hour or so before using!

Ingredients:
Dough: 350 g flour
1 tsp salt
200 ml water
2 tbsp olive oil
1 sachet dried yeast
half tsp sugar

Mixz the water, sugar and yeast in a small bowl and let it stand in a warm place until frothy. Mix the rest of the ingredients in a large bowl.
Pour in the frothy yeast mixture and knead until smooth and elastic. Cover with cling film and leave in a warm place for an hour.
 Dough should double in size.
When doubled roll it out as thin as you can onb a floured surface.
Place in a large baking tin spread sparingly with olive oil and semolina. Pierce with a fork all over.

Sauce: 1 tbsp olive oil
1 onion finely chopped
1-2 garlic cloves crushed
1 tin chopped tomatoes
2 tbsp tomato puree
1 tsp sugar

Heat the oil in a small saucepan and sautee the onion and garlic until soft.
Add the rest of the ingredients and simmer on a low heat for about 30 mins or until thickens.
Spread the sauce on the pizza base.
Choose your toppings. We used what we could find in the fridge and cupboard with my daughters. ;)  Sliced mushrooms, finely chopped red onions, sweetcorn, pineapple.
Spread the topping on your pizza. Pre-heat the oven to 200 C. Graet a heaped plateful :D of cheddar cheese and spread over your pizza. Put in the oven for about 15-20 mins, or until the edges of the base are turning brown and the cheese is bubbling and golden.
Enjoy!
