Mini meat loaves

I love this simple and quick meal and so do my two little girls! I found the recipe in my favourite cooking magazine, EasyFood.

Mix together 3-4 grated carrots, a grated courgette, 500 gr minced meat, a finely chopped red onion, a generous handful of frozen peas, 2-3 tbsp of ketchup, a beaten egg, and about half a cup of breadcrumbs (if the mixture is too sloppy you can add more). Diveide them between muffin cases and cook in a pre-heated oven on 220 C for 30-40 mins.



We eat it with sweet potato-potato mash, broccoli and a quick green salad dressed with olive oil. Perfect for a cold windy day like this!
