Carrot & oat bread

We were getting a bit bored with just the usual bread so I tried to experiment a bit with different ingredients. This one came up as a winner so far. :)

 Ingredients:
900 g flour
1 tsp salt
7 g dried yeast
1 tsp caster sugar
700 ml water
2 handfuls of porridge oats
half cup sunflower seeds plus extra for sprinkling
1 large carrot, grated
2 tbsp wheat germ
1 egg, beaten mixed  with a tsp salt

Mix the yeast with appr. half cup of warm water and the sugar. When frothy mix with the rest of the ingredients. Knead on a floured surface until firm smooth and elastic. Put in a gresed bowl, cover and leave in a warm place until doubled in size.
Grease a baking tray, shape your bread and cover. Leave it for half an hour. Then brush with the egg, sprinkle with seeds and bake in a pre-heated (200 C) oven for 45 mins or until sounds hollow when tapped on the base.

Potato Bread

For the last three months I've been making carrot and sunflower seed bread everyday and it kinda got boring by now. So I tried something new! I had some leftover potatoes and this went down a treat - with me. It turned out the kids don't like cumin seeds... They asked for the carrot bread again  :(
So if you don't like cumin seed either you can jusgt leave it out ;)

Ingredients:
500 g flour
250 g cooked  potatoes, mashed
1 sachet dried yeast (7g)
150 ml milk
3 tbsp oil
1 tsp salt
1 tsp cumin seeds
1 tsp sugar
lard for greasing

Mix the sugar, yeast and milk. Leave until frothy. Then put all ingredients in a large bowl and knead. If too soft add more flour. Shape two breads and place on a greased baking tray. Leave to rise for about 45-60 mins.
Brush with water and place in a pre-heated (170 C) oven for about 60 mins or until the top is brown.r

Sunflower seed bread

I've been baking my own bread for a couple of years. I've tried a good few recipes and this is our usual bread, fairly quick and easy and lasts for long. (Unless we eat it all straight out of the oven with butter and milk!)
Ingredients:
3 cups flour
1 sachet dried yeast
1 tsp sugar
20g lard
a handful wheat bran
generous handful of sunflower seeds
1 tbsp semolina
450 ml water
 Mix the yeast and sugar with a little water and leave in a warm place to rise. Mix the rest of the ingredients in a large bowl.
 Stir in the yeasty mixture when frothy and knead until smooth and elastic.
 Leave in the bowl, covered, until doubled in size.
 Punch back the dough and shape your bread. Place on a floured baking tray and leave to rise for about 30-40 mins.
Place in a pre-heated (200 C) oven and bake for 45-55 mins. You can brush the top with eggwhites and sprinkle with extra sunflower seeds before baking.
